The oil is gained from olives that have been rigorously picked by hand, with no rakes, tools or mechanical devices.
The picking takes place at different times, according to the kind of cultivar, and the same happens for the milling and storing of the extracted oil.
The oil that has not been filtered is left to settle and to decant in inoxidizable steel barrels at a constant temperature of 15° C degrees for five months.
Our oil is vacuum-bottled, ready to hit the market after one month.
