Experience has taught us that each year’s and each period’s cultivars need an ad hoc transformation process to obtain a high-quality product. This is the reason why we decided to acquire the company oil mill, which enables us to work on the product at variable speed and in different ways for the preparation of the olive paste: traditional oil milling, extraction of the stone, extraction of the stone with separate crushing of the latter, extraction of the stone with reinsertion of the whole stone.
